, : A study on flavour preference of ice cream. Indian Journal of Dairy Science 25(4): 257-262

A study of flavour preferences was carried out using ice cream testing 12% fat, 10% milk SNF, 15% sugar and 0.4% gelatin, and frozen to 90% overrun. Nine flavours were divided into 2 groups, citrus and non-citrus but orange was common to both. 52 judges were drawn from income group A (>Rs 300/month) and income group B (<Rs 300/month). They were able to differentiate flavours in the non-citrus group, but both income groups found difficulty in distinguishing flavours in the citrus group.
