When apples ripen normally after harvest the production of aroma volatiles increases at the onset of the respiration climacteric. Gas chromatography of the volatiles of Cox's Orange Pippin showed that hexyl acetate, butyl butyrate and butyl acetate are the major components, with smaller amounts of other esters, alcohols and carbonyl compounds. Volatile production was studied during ripening at 20 deg C after various periods of storage at 3.3 deg C in air and in controlled atmospheres.
