A nutrient solution containing lactose, e.g. whey or milk, and 0.5-2.0% growth activator, e.g. yeast autolysate and yeast extract, is inoculated with non-gas-forming thermophilic lactic acid bacteria, particularly bifidus bacteria and/or thermophilic lactobacilli. After its addition to a prepared food product, e.g. cabbage, herrings or gherkins, the whole is incubated at 35-45 deg C for 24-48 h to effect complete fermentation. The rapid acidification prevents the growth of spoilage organisms.
