, : Acceleration of Cephalotyre 'Ras' cheese ripening by using trace elements. I. Pilot experiments. Egyptian Journal of Dairy Science 1(1): 33-44

The effect of adding 1 of 2 mixtures of trace elements to raw milk, raw milk + starter or pasteurized milk on the quality of Ras cheese was studied. The mixtures contained (i) B, Mn, Cu, Zn, I, Br, Ti, Sn, Co, Si and Ni and (ii) Fe, Mn, Cu, Zn, Co and I; their solutions were added to milk in the ratio 1:5000. The cheeses were scored and analysed during 4 months ripening. The trace elements increased fat and protein hydrolysis, particularly in pasteurized milk.
