The possibility of accelerating ripening and improving the quality of Armyansk pickled cheese was studied using 3 types of culture. A mixed culture consisting of 3 strains of X-ray mutants of lactobacilli and 5 strains of normal streptococci (spp. not specified) gave the best results; the cheeses were ripe at 45 days (vs. about 60 days for conventional starter) and had the best aroma and taste and the highest concn. of amino acids.
