, : Acceptability of opaque-2 maize in Colombia. Archivos Latinoamericanos de Nutricion 22(4): 561-575

From 12 densely populated departments of Colombia, where maize is much used, 1176 persons aged from 7 to 60 years, from urban or rural communities and of low or very low social and economic status, were divided into groups of 20. They were given 68 different dishes of 6 types, with some modification of traditional cooking methods, based on ordinary maize or on yellow or white opaque-2 hybrid maize. Taste, smell, texture, consistency and appearance were rated as good, medium or bad.
