Moisture content was determined in 8 segments (of about 18 deg ) cut from each of 18 cylindrical Gouda cheeses (12 days old) bearing diagonal markings to indicate the corners of the original block of curd. Average moisture content of the segments from the "wettest" cheese was 42.4% and from the "driest" 41.4%, while the difference between segments in individual cheeses ranged from 0.9 to 2.1%.
