Streptococcus lactis 797 and Lactobacillus bulgaricus 58 were cultured in various media. Str. lactis grew best in whey medium with 3.5% sodium citrate and nearly as well in skim-milk with 5% yeast autolysate and 1% CaCO3 (SY) or with 1% CaCO3 alone (SC). L. bulgaricus grew best in SY, and grew well in SC which also preserved best the morphological characteristics of the cells.
