Values for fat estimated in lean meat by the Newport Instruments Quantity Analyser were linearly related to those obtained for extractable and total fat by Soxhlet extraction and digestion with dilute HCl then Soxhlet extraction; residual standard deviations were 0.16 and 0.2%, respectively, of wet weight.
