In the USA the overall demand for meat per caput has increased from about 66 kg. in 1950 to 84 kg., purely because of the sharp increase in the demand for beef. The reasons for this rapid rise in demand and consumption are explored and an attempt is made to explain it by historical development of settlements. The specialization of farms on cattle production is pointed out and the division of labour in beef production into three stages (calf production, rearing store cattle, fattening).
