Following an introduction which mentions previous reviews on the subject and recent developments in food production and processing, the topic is reviewed under the following headings: food production (including effect of diet on milk and carcass composition); storage and transport; and food processing (including basic studies, chemical interaction, freeze-drying of foods, freezing of foods, canning processes, UHT-treated milk, irradiation of foods, and hydrogenation of fats).
