Analysis of samples of cows' milk from 22 areas in Japan showed that in areas where cows were fed on pasture (high C18:3 fatty acid content) in summer and on hay or silage (high C16:0 and low C18:3 fatty acid content) in winter, milk had high C52/C36 triglyceride ratio, iodine value and trans acid content and low C16/C18:1 fatty acid ratio and saponification value in summer), this situation being reversed in winter.
