Mean contents (as % of total fatty acids) of C16:0, C18:1 and C14:0 in the beta -position of triglycerides in 144 composite cows' milk samples were 32.4, 20.9 and 15.5% respectively; C4:0 and C6:0 were negligible. Contents of C14:0 and C16:0 in the beta -position were highest in winter, and C18 fatty acids were highest in summer. Samples from Hokkaido showed greatest seasonal variation. Regional variations are described, and related to types of feed given to the cows.
