, : Studies on the production of milk-clotting enzymes, proteolytic enzymes and mucilage by fungi. Journal of General Microbiology 84(2): 327-331

28 of 48 fungi tested showed milk clotting activity, the clotting times at 40 deg C of filtrates from 7-day (30 deg C) surface cultures ranging from 2 min to 12 h (vs. 7 min for 2 mg calf rennin). Milk-clotting activity appeared to be related to mycelial growth but not to either pH of the culture filtrate or its total protein content. An inverse relationship appeared to exist between the production of milk-clotting enzymes and formation of mucilage in some fungi.
