The polyphenoloxidase activity of the fruit chloroplasts of 2 apple cvs changed during fruit growth and ripening. The polyphenoloxidase in the chloroplasts of green fruits consisted of one high-molecular weight component. As the fruit grew and ripened enzyme components with lower molecular weight appeared.
