, : Studies on the rennetability of dried skim-milks. Milchwissenschaft 28(10): 645-649

Estimations of 'whey protein index' made on 90 samples of dried skim-milk indicated that this index provided only a limited measurement of the rennetability of the reconstituted milks. Evaluations of rennetability and curd firmness were best obtained by the use of the lactodynamograph. Of 44 spray-dried skim-milks thus tested, rennetability was found to be good, satisfactory and unsatisfactory respectively in 18, 34 and 48%, and curd firmness in 21, 26 and 53% of the samples.
