Studies on the simplification of methods for estimating the lean and fat contents of pig carcasses. Pt. 1. Characteristics of the experimental material and simple correlation coefficients

73 gilts and 73 barrows were slaughtered at 105-115 kg live weight. The left half-carcasses were dissected basically according to the official standards used in the meat industry, while the right half-carcasses were dissected by the method used at progeny testing stations. Data are tabulated for each of the characters analysed, and correlations are shown between these characters and the weight and percentage of lean and of fat in the primal cuts.
