Studies on the thermal properties of quarg

, : Studies on the thermal properties of quarg. Nahrung 16(5): 467-471

A special calorimeter for determining the specific heat capacity of quarg is described. Results for ordinary quarg and cream quarg (nearly 45% fat in DM) are expressed by 2 linear equations. The values obtained with the plate technique for the thermal conductivity at 15 and 50 deg C are presented.
