, : Carrot flavour and the factors which influence it. Journal of the Science of Food and Agriculture 26(10): 1610

Studies with four varieties grown at four sites for three seasons showed that (1) site had a marked effect on flavour and composition of volatile compounds; (2) the magnitude of the difference in flavour in any one variety appeared to be related to the percentage organic matter in soil, soils high in organic matter producing poor-flavoured carrots, and loamy soils reducing the level of volatile compounds; and (3) varieties differed in flavour and the composition of the volatile fraction when grown under the same conditions.
