, : Chemical induction of local reddening in strawberry fruits. Journal of the Science of Food and Agriculture 28(3): 243-246

Premature reddening of unripe fruit occurs around Fusarium infection sites and extracts of cultures of the fungus caused reddening when applied to cavities of unripe fruits. The identification of fumaric acid as an active constituent of culture filtrates of the fungus is here reported.
