In cucumber fruit transferred from controlled chilling, the lowest turgor pressure was observed in the surface and subsurface tissues of those fruits chilled at O deg C, in which a contraction of the protoplast occurred. The highest turgor pressure was noted in the flesh tissue of fruit chilled at 5 deg , where there was a breakage of the plasma membrane.
