Monthly analyses of fat and protein in 1230 samples of suppliers' milk reaching Weihenstephan State Creamery from Jan. to July 1975 averaged 3.8-3.9% and 3.3-3.4% respectively. Corresponding ranges for individual samples were 2.9-5.0% fat and 2.6-4.1% protein. An increase of 1% in fat was associated with an average rise of 0.45% protein in Jan. and 0.25% in July.
