To study the reasonable level of gamma -rays to be irradiated on bran for prevention of damage by insects and moulds during storage, changes in fat of rice bran and wheat bran during irradiation and storage were estimated. The brans were irradiated with 0.04, 0.24 or 2.26 Mrad and were then stored at 25 deg C, 80% relative humidity for 8 weeks. Peroxides did not increase with 0.04 Mrad, but increased with 0.24 or 2.26 Mrad.
