Experimental sheep with ruminal fistula were fed young plants containing more than twice the concentration of nitrate nitrogen generally considered to be toxic. The nitrite levels in ruminal fluid remained low, which presumably accounted for the lack of toxic symptoms. It was concluded that the digestion of the large amount of carbohydrates, also present in the feed plants, reduced ruminal pH to a level at which reduction of nitrate to nitrite was inhibited.
