Results of studies on nutrient content in selected variations of edible potatoes

, : Results of studies on nutrient content in selected variations of edible potatoes. Acta Alimentaria Polonica 3(2): 87-97

During 3 consecutive years samples of potatoes of 8 varieties cultivated in Poland, Giewont, Pierwiosnek, Krokus, Epoka, Osa, Flisak, Merkur, Lenino and Uran, were analysed. Values for DM, protein, ash, Ca, P, Fe, K, Mg, Cu, Zn, Mn, thiamin, riboflavin, niacin, vitamin B-6, free folic acid and folacin are tabulated. Ash varied only slightly with variety but was influenced by region.
