Studies of polyphenol oxidase activity, total polyphenol content and oxidative colour changes showed enzyme activity to be appreciably higher in varieties with a tendency to browning, such as Gelber Bellefleur Red Delicious and Ajvanija, than in those with a lesser tendency, such as Golden Delicious and Jonathan.
