Details are given of the performance of the following freeze-dried cultures marketed by VEB Ostra Dresden, German Democratic Republic: BK butter starter, Kkm cheese starter (meso-thermophilic); Kkt cheese starter (thermophilic); Jok yoghurt culture; Streptococcus thermophilus; Lactobacillus helveticus; L. casei; and L. bulgaricus 590. The performance data, tabulated in detail, are based on at least 10 tests on each culture.
