From seeds of 3 groundnut grown in 4 locations defatted flour and protein isolates were prepared and analyzed for Ca, Fe, Cu, Mg, Na, K and Z conc. and their retention, resp. Those elements that may be associated with phytic acid in the flour were present in lower, but still significant, conc. in the protein isolates. Values are tabulated for Ca, K, Mg, Na, Mn, Cu, Fe and Zn in groundnut flours and isolates.
