This paper discusses the adaptation of milk processing techniques for use in developing countries. A hypothetical milk processing plant, adapted to the natural environment and to the demands of the local population, is described. Production of inexpensive dairy products rich in protein is suggested. In order to keep the price of these products low, milk fat could be used for luxury products such as butter, ghee and cream.
