, : Cows' milk fat and human nutrition. Proceedings of the Nutrition Society 37(3): 231-240

Cows' milk fat consists mainly of triglycerides together with smaller amounts of phospholipids, cholesterol, carotenoids, vitamin A, vitamin D, and trace substances. The nature of the unsaturated fatty acids in cows' milk fat is examined in some detail. Further discussion focuses on the dietary intake of milk fat in the United Kingdom, digestion and absorption of milk fat, nutritional significance of trans unsaturated fatty acids in cows' milk and the role of essential fatty acids of cows' milk in infant nutrition.
