Meat and fat quality in purebred and crossbred pigs produced under identical conditions in the southern Ukraine

For Russian Large White (RLW), Landrace, Landrace X RLW, RLW X Landrace, Mirgorod X RLW, Ukrainian White Steppe X RLW, Ukrainian Spotted Steppe X RLW, RLW X (Landrace X Mirgorod), Landrace X (Mirgorod X RLW), and Welsh X (Landrace X RLW) pigs (15 males + 15 females /group), water-holding capacity of meat ranged from 60.0% in Landrace X RLWs to 63.4% in the last type of crossbred, protein percentage of meat from 18.0 in Ukrainian Spotted Steppe X RLWs to 22.20 in Landraces, and fat percentage of meat from 15.0 in the last type of crossbred to 20.0 in Mirgorod X RLWs. The iodine value of backfat ranged from 57.8 in Ukrainian White Steppe X RLWs to 61.25 in the last type of crossbred. Data are tabulated, and the significance of some differences between the types is given.
