A compositional study of amaranth grain


, : A compositional study of amaranth grain. Journal of Food Science 46(4): 1175-1180

Ten samples of amaranth seeds, different species, had protein (N X 5.85) 15.3 to 18.2, fat 5.6 to 8.1, fibre 3.2 to 5.8 and ash 2.8 to 3.8% of DM. Values are also tabulated for vitamins, 9 minerals, 5 saccharides, amino acids, fatty acids, tannin and phytic acid.
