Krill obtained from Antartica was stored at -30 deg C, was thawed, centrifuged, shelled, freeze-dried, finely ground, extracted with isopropanol and dried at 60 deg. To restore functional characteristics lost during extraction and drying, the product was treated with 0.25% NaOH, centrifuged and the supermatant was dialysed and freeze-dried. The end-product was a light powder readily soluble in water over a wide pH range and with good foaming and emulsifying properties.
