Investigations were carried out to develop a method of producing a modified milk protein soluble in an acid medium, using HCl casein and low-Ca coprecipitate (obtained by precipitation of skim-milk protein with heat, acid and CaCl2). It was found that protein fractions obtained by enzymic and acid hydrolysis were precipitated in an acid medium, and although the solubility of casein could be improved by acylation with acetic acid anhydride, this treatment was difficult to apply in practice.
