In cold-hardy Kharkov and nonhardy Champlein winter wheat cultivars, freeze-induced denaturation of cell membranes, measured by the acid phosphatase method, occurred at an exponential rate and was irreversible under treatments that caused lethal damage to cells. Plotting the logarithmic values of enzyme units released per unit fresh weight against the reciprocal of the absolute value of temperature ( deg C) gave a curve with a linear segment of maximum slope.
