The health aspects of single-cell protein (SCP) and of microbial biomass product (MBP) are discussed. Aspects include organoleptic properties, allergic reactions, mutation to or contamination with toxic strains, hazards of working with live microorganisms, accumulation of heavy metals, pesticides, drugs, toxic metabolites or foreign bodies.
