Enzymic determination of lactulose

, : Enzymic determination of lactulose. Zeitschrift fur Lebensmittel Untersuchung und Forschung 171(6): 443-445

Enzymic determination of lactulose in the presence of a great excess of lactose, such as exists in heat treated milk products, is reported. Details are given for determination of lactulose in milk, although the method can be applied to other products. Milk is treated with Carrez reagent, and after filtration beta -D-galactosidase is added.
