This review discusses the degradation of milk preproteins in mammary gland epithelium by signalase; the structure and mechanism of alkaline proteases in milk and the resulting beta -casein fragment in proteose peptone; acid milk protease, and protein degradation in cheesemaking and during the storage of UHT milk; the action of chymosin on alpha s1- and beta -casein; and proteases in lactic acid bacteria, particularly aminopeptidase, and their action on casein.
