, : Pantothenic acid content of a nursing home diet. Nutrition and metabolism 25(3): 178-181

The customary weekly diets of residents of a Utah nursing home were analyzed for pantothenic acid content by radioimmunoassay. A total of 21 meals, (7 breakfasts, lunches, and dinners, excluding beverages), were evaluated. Mean daily pantothenic acid content was 3.75 mg, or 2.22 mg/1000 kcal. These values are below the estimated safe and adequate adult daily dietary intake for the vitamin (4-7 mg) established by the Food and Nutrition Board. However, daily intakes could be elevated by the addition of beverages (especially milk) and snacks. Energy content of these nursing home meals was adequate for female residents, but was on the low end of the recommended range for men. Pantothenic acid requirements are related to energy intakes; the vitamin functions as a coenzyme in energy metabolism. Further evaluation of blood and urine pantothenate levels of institutionalized elderly individuals is needed. (nm)
