Changes in the activity of pyruvate kinase (EC 2.7.1.40), glucose-6-phosphate dehydrogenase (EC 1.1.1.49), isocitrate dehydrogenase (EC 1.1.1.42), alanine aminotransferase (EC 2.6.1.2), aspartate aminotransferase (EC 2.6.1.1) and phosphoenolpyruvate carboxykinase (EC 4.1.1.32) in the aorta and liver were studied in weanling rats given diets in which casein or gluten was increased during 14 days (5, 10, 15, 20, 30 and 40%).
