The in vitro rates of esterification of oleoyl-CoA to lysophosphatides by acyl-CoA:lysophosphatidylcholine acyltransferase was similar in developing seeds of soyabean Williams and A5, a mutant containing nearly twice as much oleic acid as Williams. Lysophosphatidylethanolamine was a poor substrate for this reaction. Extracts from Williams had 50% greater oleoyl phosphatidylcholine desaturase on a FW basis than did A5 and appeared to have a similar affinity for oleoyl-CoA.
