The effects of experimental diets characterized by high levels of 18:3(n-3) (L), 18:2(n-6)(G) and saturated fatty acids (C), in comparison with a reference diet containing fish oil fatty acids (F), were investigated on adult sea bass brain lipid composition. The results were compared with liver. In the brain the differential dietary input was mainly reflected on fatty acid composition of total lipids, where 18:3(n-3), 18:2(n-6) and 14:0 prevailed in the L group, in the G group and in the C group, respectively. The (n-3) + (n-6) total content and the (n-3)/(n-6) ratio showed slight variations among dietary groups. The unsaturation parameters were unaffected. In polar lipids fatty acid composition showed minor dietary differences. The brain sensitivity to the dietary input was lower in comparison with the liver. The results are discussed on the basis of literature data and of brain features in lipid metabolism.
