Freeze-drying using adsorbents

, : Freeze-drying using adsorbents. Molochnaya Promyshlennost' (5): 15-17, 47

Frozen granules of tvorog (diam., 8 mm) or apple puree (diam., 3-5 mm) were placed on a griddle in the vacuum chamber of a freeze-drying installation, and granules of the NaA-2 MSh synthetic zeolite of 1.5-3 mm diam. previously activated by heating at 550 degrees C for 4 h were placed on a griddle below the product; thermocouples were placed within the product and zeolite layers, and freeze-drying was carried out to 10 degrees C in product granules corresponding to moisture content of approx. 7%. The adsorbent was used in a vol. ratio to product of 2:1, 3:1, 5:1 or 10:1; drying was uneven at the 1st 3 ratios and duration ranged from 60 min at the periphery to 100 min in the centre of the griddle. However, at the 10:1 ratio, the difference was reduced to 5-10 min, and the total duration was reduced 2x. Examination of the effect of distance between product and adsorbent on duration of drying showed that best results were obtained with a distance of 20 mm, and that drying in this instance was completed in 85-95 min, 1.5x faster than in drying without adsorbent. Tvorog and apple puree dried very similarly. The adsorbent was reactivated after use.
