The temperatures of non-cooled vegetables immediately before auction in wholesale markets were always much higher than the ambient temperature, reaching over 40 degrees C in some items, whereas temperatures of pre-cooled vegetables were 10-15 degrees. In a study of snap beans (Phaseolus vulgaris) the temperature gradually rose during transportation, the final temperature depending on the stacking method during transport and the type of carton used.
