The unit comprises superimposed trays having matching openings. A cheese mould is placed in each opening so that it can slide vertically. Each mould has retention means arranged above and below the corresponding tray. A cover shuts off each mould and bears on the bottom of the mould located in the opening of the tray immediately above, to form pressing columns independent of one another. The unit is used particularly for making cheeses of the semi-pressed soft type.
