Lactose content - a factor to distinguish Channa and Khoa based sweets

, : Lactose content - a factor to distinguish Channa and Khoa based sweets. Journal of Food Science and Technology, India 24(3): 145-146

In India, incidences have occurred where khoa (a condensed milk product) has been adulterated by addition of chhana (an acid/coagulated milk product). Determination of lactose content by colorimetric methods can be used to distinguish between the 2 products and between khoa- or chhana-based sweets. 30 samples were obtained from a local market.
