, : Proteases and peptidases of Pediococcus species. Journal of Dairy Science 72(Suppl. 1): 145

Six strains of Pediococcus pentosaceus and 2 of P. acidilactici were examined for intracellular proteinase and peptidase activity. Aminopeptidases, dipeptidases and dipeptidyl aminopeptidases were separated using PAGE, and identified by histochemical staining using various amino acid beta -napthylamides, dipeptides and glycyl-proline- beta -napthylamide, resp. as substrates.
