Estimation of gluten in different foods

, : Estimation of gluten in different foods. Var Foda 42(7): 371-381

Gluten was estimated in selected products by quantitative enzyme immunoassay (Qlone test) and by semiquantitative dot blotting method. All 28 foods marketed in Sweden as gluten-free products contained acceptably minimal amounts of gluten or none at all. Nearly all of the 68 beers or other malt liquors tested and all 7 brands of soya sauce were devoid of gluten.
