The search for higher production at the lowest possible costs dominated French agricultural policies up to the 1970s. Although this succeeded in eliminating shortages and led to food surpluses, the price was high in terms of degradation of the environment and accumulation of substances dangerous to human health in the soil, namely nitrates and phytosanitary products.
