The results of 3-year studies on the mechanical properties of the flesh and peel of 9 cultivars are summarized. Thickness, dry matter and fibre contents, and shear resistance were determined for the peel, and dry matter and fibre contents, cell size, intercellular space, resistance to penetration, firmness, theoretical modulus of elasticity and penetration depth were studied for the flesh.
